Ingredients:
- 1 medium cauliflower (cut into florets)
- 2 tbsp olive oil

- 1 tbsp soy sauce (or coconut aminos for a gluten-free option)
- 1 tbsp lime juice
- 1 tbsp maple syrup or honey
- 1 tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
Homemade Jerk Seasoning (Optional):
- 1 tsp allspice
- ½ tsp cinnamon
- ½ tsp thyme
- ½ tsp cayenne pepper
- ½ tsp ginger powder
- ½ tsp onion powder

Preheat Oven:
- Set your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.

Prepare the Marinade:
- In a large bowl, mix olive oil, jerk seasoning, soy sauce, lime juice, maple syrup, garlic powder, smoked paprika, salt, and pepper.

Coat the Cauliflower:
- Toss the cauliflower florets in the marinade until evenly coated.
- Let them sit for 10–15 minutes for better flavor absorption.

- Spread the florets on the baking sheet in a single layer.
- Bake for 25–30 minutes, flipping halfway, until crispy and golden brown.
